There are two things I love about cold weather. Oversized sweaters or cardigans and all the yummy soups. And since I’m mostly living in leggings and sweatshirts these days, thanks Covid, I’m making all the soups I can find on Pinterest. Here are my 7 must-try soups this winter.

Chicken Tortilla Soup
This chicken tortilla soup is the perfect transition soup. It’s light enough for summer but cozy enough to warm you during these cold winter months. The best part? It’s made in the slow cooker. It is super easy to put together on a busy morning and it’s sure to be a family favorite. Tortilla strips add the perfect crunch!
Tex-Mex Chili
This is actually a Rachel Ray recipe that I’ve been making for years. I adjusted the directions to work for the slow cooker so I wouldn’t be standing over the stove with a baby on my hip during those crazy hours before dinner. All you mommas know what I’m talking about.
Slow Cooker Directions:
- Cook Lean Beef over Medium-High heat in skillet until brown.
- Add onion, garlic and spices
- Cook until onions are softened.
- Add the meat mixture, beans and tomatoes to slow cooker.
- Salt and Pepper to taste.
- Cook on low until heated through.
As Rachel Ray suggests in her recipe, corn chips and pepper jack cheese make the perfect topping.
Mexican Vegetarian Quinoa Chili
If you are looking for a vegetarian chili, I promise this will be your favorite! The quinoa is so filling you won’t even notice it is vegetarian. It also makes the perfect burrito filling the next day as leftovers. Add a little cheese and sour cream and you have vegetarian tacos.
Vegetable Soup
This recipe is perfect for hosting friends and family. Trust me, there will be plenty for everyone and lunch the next day. It pairs perfect with grilled cheese which I suggest making on your George Foreman grill or panini maker. So crispy!!
