When I was in college, a friend welcomed me into her home for a much appreciated family dinner. As a poor college student six hours away from home, I was very thankful for a local family who treated me with such kindness. She made a healthy black bean salsa that I’m happy to share with you. I have easily made this salsa one hundred times for a large number of people and it is always a party favorite. I mean, is there anything better than a tried and true salsa recipe?
Depending on the crowd’s preference, I sometimes leave out the cilantro. But I ALWAYS double this recipe. One batch is never enough. It is SUPER easy too with just a little bit of chopping. Chop, Dump, Mix and Serve. It can’t be easier than that. Add your favorite bag of Tostitos and you’re good to go. If I’m making to take to another family, I’ll use these pans so they have nothing to return or wash. So here it is…Your new tried and true healthy black bean salsa recipe!
Black Bean Salsa
Ingredients
- 1 15 oz Can Black Beans Rinsed and Drained
- 1 Cup Salsa of your Choice Original Recipe - Picante Medium
- 1 bunch Green Onions Chopped
- 1 TBSP Garlic Minced
- 1 bunch Cilantro Chopped
- 1 TBSP Dried Parsley
- 1 Red Bell Pepper Chopped
- 1 Avocado Chopped
- 1 Can Shoepeg Corn Drained
- 1 TBSP Lime Juice
- 1 TBSP Olive Oil
- 1/2 tsp Cumin
Instructions
- Mix, Chill and ENJOY!
